This is soooo sinfully good and I love the small ingredient list. You can substitute chocolate chips for the squares- just look at the listed ounces and estimate 1o ounces of that number. Most average size bags are 12 ounces so you would use 5/6 of the bag. Read more
Yum, Yum, Yum. This makes a lot so you can easily cut it in half, but I usually choose to make the whole batch and have leftovers. I start with dried beans because they are cheaper, but if you have canned or prefer the convenience of course that is fine. Just skip the 40 minute simmer. Read more
I have seen a lot of recipes for this particular dish, but I think this is the best one (ha!) and it is sooooo delicious. Not exactly a diet recipe, but worth the indulgence. I make these maybe twice a year. They are fantastic with baked ham. Read more
I found this recipe in Deborah Madison’s wonderful Vegetarian Cooking For Everyone. I have tweaked it just a bit to make it a little cheaper- even though spaghetti and tomato sauce is one of those things that just makes sense for cheap eats. I make this when roma tomatoes are on sale. It’s a little more special than regular marinara and because of the great flavor from roasting you will not miss the meat you might regularly put into your spaghetti sauce. Read more

I really like this dish and it fits my criteria for a great meal. Vegetables? Check. Fast? Check. Easy? Check. I found this recipe in More With Less by Doris Longacre (FANTASTIC cookbook) and have found so many recipes I can use over and over. I have a lot of pasta recipes but this is the one that is both very healthy and very delicious. Read more
You really don’t need a box mix to make great pancakes, in fact, I dare say you will like the homemade kind even better. These are dirt cheap too. Pancakes are a wonderfully cheap and tasty meal. My favorite dinners growing up were when we had “breakfast” for dinner. Here is a great, basic pancake recipe. Double or triple recipe to serve more if you need to. Read more
Confession time. I actually like those boxed dinners ( look how cute their little hand guy is:) and look for them on sale. I guess its the no-brain-work-involved aspect of it. However, I just tried a homemade version that actually tastes great and Read more
A delicious and cheap snack. I buy the popcorn in bulk and its much less expensive than the microwave kind. I sometimes make this with less sugar and it’s still delicious! Try to save some for others, but I won’t judge if you can’t. Read more
