Because you can never have too many ground beef recipes in a cheap and easy household. (The good kind of cheap.) This is my new favorite meat sauce. The special ingredient (cream cheese) sounds kind of odd, but adds a great creaminess/smoothness to what can otherwise be an acidic tasting dish. It calls for two different kinds of processed tomatoes, which is kind of important for texture. The diced means you get nice little chunks of goodness, and the sauce, well, makes the sauce. Super easy and super yummy. I am not really a fan of regular basil pesto (don’t hate it, just don’t love it.) I double the recipe and keep some in the fridge. Great with scrambled eggs as well, but truly for pasta lovers. I don’t usually use the green can of parmesan, but I also don’t always spring for the real stuff either. Look around and see what kind of compromising you are willing to do between taste and price. Read more

This is more on the side of easy than cheap, but easy, totally delicious and kinda cheap is still a great option in my humble opinion. I’ve made this with both goat cheese and gorgonzola and if you’ve never tried goat cheese you might want to give it a shot. But if you’re a blue cheese fan and you know it go for the gorgonzola. I found this recipe in Deborah Madison’s wonderful Vegetarian Cooking For Everyone. I have tweaked it just a bit to make it a little cheaper- even though spaghetti and tomato sauce is one of those things that just makes sense for cheap eats. I make this when roma tomatoes are on sale. It’s a little more special than regular marinara and because of the great flavor from roasting you will not miss the meat you might regularly put into your spaghetti sauce. Read more

I found this recipe in More With Less by Doris Longacre (FANTASTIC cookbook) and have found so many recipes I can use over and over.
