Because of the cheap and easy nature of pasta I am always looking for new ways to eat it. This is a little different and if you’re really into asian flavors I think you will love it. You might have to invest in a couple of ingredients at first, but everytime you make this your cost per meal will go down. Waste not and all that.:)

Try making something this delicious with so few ingredients again. Doesn’t happen that often, although cheese is the ultimate flavor enhancement. If you can’t find the flavored feta, you can add basil and sun-dried tomatoes yourself. Or go an easier route and use a cheese like mozzarella and season yourself. Obvious, but wait until chicken breasts are on sale to make this and stock up. Read more

Most people probably already have a recipe for marinara, but I really like the one I have and thought I would share it. It’s a little more expensive because it gets its flavor from a great assortment of veggies but that also makes it a one pot kind of meal. So that ups the easiness factor for me. Read more

Super easy and super yummy. I am not really a fan of regular basil pesto (don’t hate it, just don’t love it.) I double the recipe and keep some in the fridge. Great with scrambled eggs as well, but truly for pasta lovers. I don’t usually use the green can of parmesan, but I also don’t always spring for the real stuff either. This is like a grilled cheese that is baked. The custard poured over makes the sandwich fluffy after its little stint in the oven and adds a great depth of flavor. I have made this with milder cheeses and its still good, but its even better with cheese that has more personality. You can add meat to the middle if you like as well, and I have even had success using tuna. One important thing to the success of this easy dish is to make sure it is not undercooked or overcooked. I’m sure you’re aware that oatmeal is the cheapest breakfast ever so this recipe is a no-brainer. It takes something ho-hum and with just a little technique gives it a craveability. I buy steel-cut oats in bulk at Whole Foods for a lot less than you get in those tiny little canisters. I last paid around 60 cents a pound- really worth it. I buy my carrots unpeeled and uncut and do it myself, not only because it’s cheaper, but they taste better to me. Carrots are so nutritious (yeah, that word again) and cheap that I can’t help but have them on the table a couple of times a week. These require a little baby-sitting so I usually make this as my side dish when the main dish is something that is taking care of itself- like a casserole in the oven or beans in the crock-pot. This is more on the side of easy than cheap, but easy, totally delicious and kinda cheap is still a great option in my humble opinion. I’ve made this with both goat cheese and gorgonzola and if you’ve never tried goat cheese you might want to give it a shot. But if you’re a blue cheese fan and you know it go for the gorgonzola.
