This is soooo sinfully good and I love the small ingredient list. You can substitute chocolate chips for the squares- just look at the listed ounces and estimate 1o ounces of that number. Most average size bags are 12 ounces so you would use 5/6 of the bag. Read more

Because of the cheap and easy nature of pasta I am always looking for new ways to eat it. This is a little different and if you’re really into asian flavors I think you will love it. You might have to invest in a couple of ingredients at first, but everytime you make this your cost per meal will go down. Waste not and all that.:)

This is more on the side of easy than cheap, but easy, totally delicious and kinda cheap is still a great option in my humble opinion. I’ve made this with both goat cheese and gorgonzola and if you’ve never tried goat cheese you might want to give it a shot. But if you’re a blue cheese fan and you know it go for the gorgonzola. These are really, really good. I haven’t seen a recipe for enchiladas that’s really like this one so I felt it was really worth sharing. I had been having a hard time finding a good sale on cheese until just this last week so I can affordably add this one back to the menu. If you are paying a lot for cheese in your part of the world, you can stretch this a little by adding beans. It still works out to being cheaper than takeout pizza or even the drive-thru. I have made these with both flour and cornmeal tortillas and both are dandy. Go with your preference. I like to serve this with a nice, crisp salad. Nothing else is needed, these are very filling. I buy my carrots unpeeled and uncut and do it myself, not only because it’s cheaper, but they taste better to me. Carrots are so nutritious (yeah, that word again) and cheap that I can’t help but have them on the table a couple of times a week. These require a little baby-sitting so I usually make this as my side dish when the main dish is something that is taking care of itself- like a casserole in the oven or beans in the crock-pot.
