I wish I could make this harder for you, but it’s not going to happen. My apologies. I make this whenever I have leftover spaghetti or some kind of thin stringed pasta. You know that horrible stuff that sticks together in the fridge when you try to save it. It’s a humble kind of dish, but comforting and tasty.
2 cups cooked spaghetti
2 eggs beaten
1 cup cheese (more like 1/4 cup if using parmesan)
2 minced garlic cloves
2 Tbls. butter
Salt and Pepper
Preheat broiler. Melt butter in 9 inch saucepan. Add garlic and cook 30 seconds. Add pasta and press down into a smooth layer. Sprinkle with salt and pepper. Pour eggs in and let brown slightly on bottom. Remove from cooktop and top with cheese. Place under broiler until golden. Remove from pan to cutting board and slice.
