I have seen a lot of recipes for this particular dish, but I think this is the best one (ha!) and it is sooooo delicious. Not exactly a diet recipe, but worth the indulgence. I make these maybe twice a year. They are fantastic with baked ham.
3 large baking potatoes
1 cup sour cream
1/2 cup butter
4 chopped green onions
1 1/2 tsp. salt
1/2 tsp. pepper
2 cups shredded cheddar or soft cheese
Heat oven to 350. Wash potatoes and pierce with fork. Bake 1 hour and 15 minutes or until tender. Remove from oven and let cool until just cool enough to handle. Cut potatoes in half and scoop out pulp. Be careful to leave the skin intact so you can fill them later. Blend pulp, sour cream, butter, onions, salt, pepper and 1 cup of cheese. Beat until smooth and fluffy. I use a mixer for this for a better consistency, but not essential. Spoon mixture back into shells evenly and top with remaining cup of cheese. Place in baking dish and return to oven for 12 to 15 minutes or until cheese is bubbly and melted. Devour.
