This is more on the side of easy than cheap, but easy, totally delicious and kinda cheap is still a great option in my humble opinion. I’ve made this with both goat cheese and gorgonzola and if you’ve never tried goat cheese you might want to give it a shot. But if you’re a blue cheese fan and you know it go for the gorgonzola.

6 oz. goat cheese or gorgonzola

1 cup half and half

1 smashed garlic clove

1/2 tsp. salt and pepper each or to taste

1-2 tsp. minced dried rosemary (start with less and add more to your own liking)

On very low heat, combine ingredients in small saucepan and heat gently stirring the entire time. Good on baked potatoes, asparagus, string beans, broccoli, steamed spinach and pasta.
