This easy side dish is sort of the opposite twin of my previous side dish featuring carrots. Instead of tending a pan of carrots stove-top, this is something to throw in the oven when you need to baby-sit your main dish or other sides.  Hope you like this one too!

1 1/2 lbs. peeled carrots; chopped into large pieces

3 Tbls. olive oil

Salt and Pepper to taste

8- 10 small garlic cloves

1 tsp. dried rosemary

Toss all ingredients together in a roomy baking dish. Add 3 tbls. water and cover tightly with foil.  Bake until tender; remove foil and roast until browned. Great with pot roast, casseroles or anytime really.
