I really love this. I love eating this as a main meal with just some crusty bread  on the side, but I also get tired of serving the same sides night after night. For a barbecue its a great complement and much fresher than opening a can of baked beans, or a nice replacement for rice as a side dish.

1 14 ounce can cannellini beans

1 pint grape tomatoes halved

4 scallions thinly sliced

2 tablespoons olive oil

1 tablespoon lemon juice (fresh if you can)

salt and pepper

In a medium bowl, toss all the ingredients together and add salt and pepper to taste. Store covered in plastic in the refrigerator.
