I’m going to be completely honest here and admit this recipe might not be to everyone’s tastes. I happen to love this because I grew up with it and peas are my favorite vegetable. I eat this over a baked potato. It’s one of my favorite vegetarian recipes. Very filling and nutritious. I use frozen peas and they are delicious, accessible and cheap, but if you ever get the chance to use garden fresh keep this recipe in mind for that day.
1 1/2 cups milk
1 tsp. sugar
1/2 tsp. salt
1/4 tsp pepper
2 cups peas
2 Tbls. butter
2 Tbls. flour
Melt butter in saucepan and sprinkle flour over. Cook 1 minute and whisk in the milk. Add sugar, salt, pepper and peas. Cook until peas are bright green. If it gets too thick, thin with a little more milk.
