Beans are about the cheapest and most nutritious things on the planet. Having a nice little stack of bean recipes that are easy and that you enjoy eating is a great way to keep your grocery bill down. This really goes into my whole philosophy on frugality. It’s easier to just do simple than trying to play a coupon game or planning elaborate meals based on a freak good find. Go with things that are usually good deals and keep your ingredient lists short and simple. This is a really good black bean soup.

2 T oil

1 small finely diced onion

1 t ground cumin

1 t chili powder

4 cups black beans soaked overnight

1 15 oz can coconut milk

Salt and Pepper to taste

Heat oil in soup pot and saute onion for 5 minutes.  Add spices, beans and 1/2 cup of water. Simmer on low for 15 minutes. Add coconut milk and simmer another 3-5 minutes. For a smoother consistency puree half the beans and stir back in.
