This recipe uses oatmeal to stretch the beef and provide texture. Serve over rice or baked potatoes, nuke a frozen veggie and dinner is on. This is a really comforting meal, kinda like meatloaf, but tastier.

BBQ Meatballs

2.5 lbs. ground lean beef (full fat will be greasy)
2 cups oatmeal
2 eggs


1 tsp. onion powder or 1 T finely chopped onion
1 cup milk
2 tsp salt
1 T chili powder
½ tsp pepper

Blend all ingredients well. Form into balls and place in baking dish.

Mix BBQ sauce up and pour over. Bake @ 350 for 1 hour.

BBQ Sauce
1 ½ cups brown sugar
2 cups ketchup or tomato sauce
½ tsp. garlic powder
2 T liquid smoke
1/2 cup beef broth (made from a bullion cube is fine.)
