I really like this dish and it fits my criteria for a great meal. Vegetables? Check. Fast? Check. Easy? Check. I found this recipe in More With Less by Doris Longacre (FANTASTIC cookbook) and have found so many recipes I can use over and over.  I have a lot of pasta recipes but this is the one that is both very healthy and very delicious.

3 Tablespoons olive or vegetable oil

1 medium onion chopped

2-3 zucchini sliced (3 small ones or 2 larger ones)

3 cups chopped fresh tomatoes or canned crushed tomatoes

1 tsp salt

1 bay leaf

Pepper to taste

1/4 tsp dried basil

1/4 tsp dried oregano ( sometimes I add more)

8 oz. spaghetti

Grated parmesan or cheese of choice

Put oil in pan and saute onion for 5 minutes.  Add zucchini, tomatoes, and seasonings.  Simmer covered for 15 minutes, uncover and simmer another 8-10 minutes or so. While the sauce is simmering away boil the noodles until al dente in plenty of salted water. Before serving sauce discard bay leaf.

Serve sauce over noodles and top with cheese if desired. I like parmesan, but have even used cheddar when that was all I had.  Enjoy!
