This is a new favorite at my house. Okay, so we eat a lot of chicken.  (I’m resisting my inner 4th grader right now that wants to say,”So sue me”). The sauce has sugar and onions, so be careful not to burn. I make this with balsamic vinegar, which is delicious, but not really necessary. It will be great with whatever vinegar you have on hand.

2 lb. chicken thighs and drumsticks bone-in, but skin removed

1/2 small onion chopped finely

2 Tbsp. sugar

2 Tbsp. balsamic vinegar

2 tsp. canola or olive oil

1 Tsp. salt

1 Tsp. ground allspice

1 Tsp. dried thyme

1 Tsp. freshly ground black pepper

Rinse chicken under cold running water. In a bowl big enough to fit your chicken pieces, combine onion, sugar, vinegar, oil, salt, allspice, thyme, and pepper. Stir it all together. Add chicken and toss to coat. Let marinate 10 minutes. Heat a non-stick skillet and spray with cooking spray. Put chicken pieces in and fry 4-5 minutes. Don’t move the chicken around too much or it won’t brown as nicely. Turn your chicken over. Turn down the heat and cook until juices run clear.

I served this with brown rice and frozen veggies.
