Because of the cheap and easy nature of pasta I am always looking for new ways to eat it. This is a little different and if you’re really into asian flavors I think you will love it. You might have to invest in a couple of ingredients at first, but everytime you make this your cost per meal will go down. Waste not and all that.:)

3 Tbls. peanut paste or peanut butter
1 tsp red chili paste
1 cup unsweetened coconut milk
1 scallion thinly sliced (use the green part)
Heat gently over low heat, stirring to combine all ingredients. Taste for seasonings and salt. Toss with thin spaghetti and serve warm or cold. You can also add other vegetables to this like mushroom, peas, or bell pepper. Just saute them in a seperate pan and add to sauce.
