I’ve been finding good deals on beef lately so this recipe has come in handy. Hope you like it.

Really Easy Shepard’s Pie

1 1/2 lbs. ground beef
1 chopped onion
2 cups frozen mixed veggies
3 large baking potatoes, peeled or 2-3 cups leftover mashed potates
4 tbsp. butter
1/2 cup beef broth
1 tsp. worcestershire sauce
Salt and Pepper to taste

Chop the potatoes into small pieces and put in cold water. Add some salt and turn the heat on. Bring to boil, reduce heat and simmer until fork tender.

While potatoes are cooking brown the beef and onion in a little oil. Add vegetables, worcestershire, salt and pepper, and beef broth. Simmer a couple of minutes.

Drain and mash potatoes in bowl with butter and salt and pepper to taste.

To Assemble: Place beef mixture in baking dish. Smooth mashed potatoes on the top and run fork through for nice peaks. Cook @ 400 F about 30 minutes.

Optional- Top with cheese and leave in until melted.
