Dinner Recipes- Porcupine Balls

I found this recipe in a a book about the great depression. It’s very down-home and inexpensive. A great, cheap option for red meat lovers. It gets its name from its appearance- when it cooks the rice puffs up and sticks out like little quills. I would serve this with a quick veggie and some bread. I have some great upcoming recipes for sides and breads that are super easy.

Also, if you don’t have tomato soup you could probably use tomato sauce. You would need to adjust for salt.

1 lb. ground beef
1 chopped onion
1 can tomato soup concentrate
1/2 cup uncooked white rice.
water
Salt and Pepper to taste

Preheat oven to 350 F.

Open can of tomato soup and pour about a fourth of it into 2 quart baking dish. Combine beef, onion, rice, salt and pepper. Shape into oval rounds. Place in baking dish and pour over remaining tomato soup. Fill soup can with water and pour very carefully over ovals. You don’t want to displace all the tomato soup on top of your little guys. Cover dish with lid or foil.  Bake for 60-70 minutes.
