These are really special. Of course, you have to love chocolate and peanut butter and if you don’t, well, there’s just no reasoning with some people.
Chocolate Peanut Butter Tarts
36 Reese’s Peanut butter mini cups, unwrapped
½ cup peanut butter
½ cup sugar
½ cup packed brown sugar
1 large egg, beaten
1 tsp vanilla extract
1 ¼ cups flour
¾ tsp baking soda
½ tsp salt
Cream peanut butter, and both sugars until fluffy. Beat in eggs and vanilla. Whisk dry together and slowly incorporate with wet mixture. Chill and roll into 1 inch balls and place in mini muffin tin. Bake at 375 for 8-10 minutes. Remove from oven and push one Reese’s cup into cookie while still hot. Allow to cool in tin and store in airtight container in a cool place.
