And you thought the onslought of vegetables would never end.  This is a three ingredient recipe if you don’t count the salt and pepper. Try making something this delicious with so few ingredients again. Doesn’t happen that often, although cheese is the ultimate flavor enhancement. If you can’t find the flavored feta, you can add basil and sun-dried tomatoes yourself. Or go an easier route and use a cheese like mozzarella and season yourself. Obvious, but wait until chicken breasts are on sale to make this and stock up.

4 skinless, boneless chicken breasts

6 oz feta sun-dried tomato and basil flavor

1/4 cup Italian style bread crumbs

Grease 9 x 13 baking dish. Place chicken breasts between wax paper or parchment paper and flatten with a straight pounding motion. A heavy saucepan works great for this. Place one side of chicken pieces on breadcrumbs and place in dish. Place cheese equally among the chicken pieces and fold in half. Sprinkle with more bread crumbs. Bake at 350 F for 25- 30 minutes.
