Ham and Beans is truly a humble food, but I love it. So simple, so nutritious, and so easy. Old-fashioned goodness.

1 lb great northern beans (or whatever you like)

1/2 lb diced ham or 1 ham hock

1 diced onion

Put beans in bowl and cover with water by at least 4 inches. Let soak at least 8 hours, but overnight is better. Put beans in soup pot with ham and onion. Bring to a low simmer and cover. Cook anywhere from 2-3 hours. If you use a ham hock remove after 2 hours, cut off meat, and return meat to pot.  Salt and pepper to taste. Serve with cornbread.

This could also easily be done in a slow cooker if you are so inclined.
