I keep thinking that those who find their way to this blog are looking for casual, inexpensive recipes and I hope they aren’t disappointed when they find themselves here. Gourmet I am not. Anyway, here’s my favorite casserole ever.
I’m not really a fan of most vegetable only soups, they tend to be wimpy and bland in flavor and in fulfillment. But this is a nice exception. You can play around with the vegetables if you like, but try to keep them somewhat similar. It’s easy to have a muddled flavor with too many vegetables. Pick things you know already go well together. This is a supremely healthy soup.
I am trying to find a better theme for my blog, not really in love with this current one. So if you stumble upon this blog in the next few days and it scares you please forgive me. I’m not the best with this kind of stuff and if I mess something up it might take me awhile to fix it.

This is a recipe that doesn’t include a can of cream of mushroom soup. It’s rich and delicious, but you can lighten it up by using low-fat sour cream. It’s cheaper to use canned mushrooms, and if you like the canned well enough feel free, but I vastly prefer fresh. If you do decide to use canned, you should still saute them with the onion to develop a little browning. Either way its good. Read more

I watch a wonderful lady on youtube who has quite the following. Her name is Manjula and she is fantastic. So far, I’ve tried a couple of her recipes and they have been great. I’m including the video to her Chapatis- it’s not the recipe that is so important- it is the demonstration that helps me.

A delicious and cheap snack. I buy the popcorn in bulk and its much less expensive than the microwave kind. I sometimes make this with less sugar and it’s still delicious! Try to save some for others, but I won’t judge if you can’t. Read more

Beans are about the cheapest and most nutritious things on the planet. Having a nice little stack of bean recipes that are easy and that you enjoy eating is a great way to keep your grocery bill down. This really goes into my whole philosophy on frugality. It’s easier to just do simple than trying to play a coupon game or planning elaborate meals based on a freak good find. Go with things that are usually good deals and keep your ingredient lists short and simple. This is a really good black bean soup.
