These are really, really good. I haven’t seen a recipe for enchiladas that’s really like this one so I felt it was really worth sharing. I had been having a hard time finding a good sale on cheese until just this last week so I can affordably add this one back to the menu. If you are paying a lot for cheese in your part of the world, you can stretch this a little by adding beans. It still works out to being cheaper than takeout pizza or even the drive-thru. I have made these with both flour and cornmeal tortillas and both are dandy. Go with your preference. I like to serve this with a nice, crisp salad. Nothing else is needed, these are very filling. I really love this. I love eating this as a main meal with just some crusty bread on the side, but I also get tired of serving the same sides night after night. For a barbecue its a great complement and much fresher than opening a can of baked beans, or a nice replacement for rice as a side dish. Read more

You can eat these like a burger, but my favorite way is just plain on a plate with some sour cream. Beans are hard to ignore if you’re looking for cheap and easy. You can also change the type of bean if you are not a fan of black beans. Pinto would be nice, but I’m not sure northern whites would work in this particular recipe.
