I have had wonderful pumpkin pancakes at restaurants and was so excited when I found a recipe to use at home. Life is beautiful, huh?
2 cups all-purpose flour
3 Tbls. brown sugar
1 Tbls. baking powder
1 1/4 tsp. pumpkin pie spice
1 tsp. salt
1/2 cup cooked pureed pumpkin
1 egg
1 cup milk
Put dry ingredients in bowl and whisk to combine. Add wet ingredients and stir briefly. Batter may be lumpy, but thats okay they will cook out. Heat your pan and grease lightly with butter or canola oil. Pour 1/4 cup of the batter into pan and cook until bubbles begin to pop up. Turn and cook 1-2 more minutes. Keep warm in oven until all are done and then serve with maple syrup and whipped cream.
