You can eat these like a burger, but my favorite way is just plain on a plate with some sour cream. Beans are hard to ignore if you’re looking for cheap and easy. You can also change the type of bean if you are not a fan of black beans. Pinto would be nice, but I’m not sure northern whites would work in this particular recipe. Give this one a try and see if you don’t love them too!

1 1/2 cups cooked black beans

2 tsp. cumin

1/2 – 1 cup grated cheese

1/3 cup chopped cilantro

1 Tbls. lime or lemon juice (fresh lime if you can)

1/2 tsp. salt

1/4 tsp pepper

Flour in bowl

Cornmeal in bowl

Mash beans and toss with cumin, cheese, cilantro, lime or lemon,  and salt and pepper. Cover with plastic wrap and refrigerate for 30 minutes. Using your clean hands form into small cakes approximately 1/2 inch thick and 3 inches across. Dredge in flour and then cornmeal. Put 3-4 Tbls. vegetable or canola oil in pan and heat over medium. Fry on medium about 8- 10 minutes on each side. Keep warm in oven.
