I buy my carrots unpeeled and uncut and do it myself, not only because it’s cheaper, but they taste better to me. Carrots are so nutritious (yeah, that word again) and cheap that I can’t help but have them on the table a couple of times a week. These require a little baby-sitting so I usually make this as my side dish when the main dish is something that is taking care of itself- like a casserole in the oven or beans in the crock-pot. I wish I could make this harder for you, but it’s not going to happen. My apologies. I make this whenever I have leftover spaghetti or some kind of thin stringed pasta. You know that horrible stuff that sticks together in the fridge when you try to save it. It’s a humble kind of dish, but comforting and tasty. Read more

I really love this. I love eating this as a main meal with just some crusty bread on the side, but I also get tired of serving the same sides night after night. For a barbecue its a great complement and much fresher than opening a can of baked beans, or a nice replacement for rice as a side dish. Read more
