This is definitely easy. You have your meat, grain, and vegetables. Takes time, but not a lot of hands on time. Very tasty.
2-3 lb. chuck roast
Flour (optional)
Salt and Pepper
2 chopped onions
1/2 cup soy sauce
1 cup water
1/2 tsp ground ginger (I use a broccoli, carrot and mushroom blend)
16 oz bag frozen vegetables
Dredge your roast in flour (optional), season with salt and pepper and brown both sides in large pot with vegetable oil. This step is optional, but does add flavor. There are three ways to proceed here.
1- Throw into crockpot with soy sauce, water and ginger . Cover and cook on low 6-8 hours.
2-In same pot you browned it in add soy sauce, water and ginger and cover. Simmer on low for 2-3 hours.
3- Transfer to oven-proof dish and add soy sauce, water and ginger, cover and cook at 300 degrees for 3 hours or so.
When beef is tender add 16oz. bag of stir fry vegetables, cook a few more minutes and season to taste. Serve over brown rice.
